Ingredients:

  • 500 grams fish fillets (such as tilapia, cod, or salmon)
  • 2 onions, finely chopped
  • 2 tomatoes, chopped
  • 4 green chilies, slit
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon fenugreek seeds
  • A few sprigs of fresh curry leaves
  • 1 cup coconut milk
  • 2 tablespoons cooking oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Clean the fish fillets and cut them into desired sizes. Set them aside.
  2. Heat oil in a pan over medium heat. Add mustard seeds and fenugreek seeds. Let them splutter for a few seconds.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
  5. Add chopped tomatoes and cook until they soften.
  6. Add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well and cook for a minute to allow the spices to blend.
  7. Add slit green chilies and curry leaves. Stir for a few seconds.
  8. Reduce the heat to low and pour in the coconut milk. Stir well and let it simmer for 5 minutes.
  9. Gently add the fish fillets to the pan, making sure they are coated with the sauce. Be careful not to break the fish.
  10. Cover the pan and cook on low heat for about 10-15 minutes or until the fish is cooked through and tender.
  11. Once the fish is cooked, garnish with fresh coriander leaves.
  12. Serve hot with steamed rice or Indian bread such as roti or naan.
